'Baerii' stands out among its counterparts, offering a traditional Eurasian caviar style rich with a distinctive iodized aroma. Its appearance reflects a classic, old-fashioned caviar. With its dark hue and exceptionally firm texture, 'Baerii' represents the pinnacle of luxurious dining experiences.

Another product, named ‘Osciètre’, originates from Uruguay and Poland, evoking the traditional essence of wild caviar. When compared to both products, distinctions arise in texture, size, and color. Unlike ‘Baerii’, it exhibits a strong and firm texture, with slightly larger eggs that appear more golden in color.


What is caviar?

Caviar, a garnish made from fish roe and preserved with seasonings, has been regarded as a delicacy for centuries. From the aristocracy of the 13th-century Russian Empire to the modern British Royal family, caviar has held a significant place on dining tables. Despite its high demand, global production of caviar remains limited. Countries such as Russia, Iran, and Italy are major suppliers of caviar worldwide. However, due to concerns over potential extinction, maritime agencies have pledged to halt its production. In Russia, caviar production was reduced between 2008 and 2010 to help restore the ecosystem. Diners continue to consider caviar a remarkable garnish due to its rarity.

With the addition of seasonings, caviar is salted and transformed into a luxurious appetizer. Historically, caviar has always been a symbol of wealth. Various royal houses in Russia and Iran regarded caviar as an exclusive delicacy. In Britain, the caviar industry is protected by the Royal Charter. In some countries, the industry was historically monopolized and reserved for the upper ruling class. However, today, diners can enjoy high-quality caviar at reasonable prices due to advancements in transportation. No longer restricted by monopolies, customers can freely purchase a variety of caviars from stores or online platforms.


Types of caviar


The main types of caviar are Beluga, Sterlet, Kaluga hybrid, American oscietre, Oscietre, Acipenser baerii and Sevruga.


The most rare and expensive caviar comes from the beluga stergeon from the Caspian Sea.


How to Serve Caviar


Traditionally, caviar tins are placed on ice and served with a mother-of-pearl spoon. A small dollop of caviar is spooned onto the backside of one’s wrist, to be warmed by body heat, and then lapped straight from wrist to mouth where it should be savored. The final traditional step is a palate-cleansing with a Champagne.

The rise in caviar's popularity has ascended with many creative recipes; Caviar topped scallops, potato pancakes topped with crème fraîche and caviar, and caviar stuffed omelets. Caviar wine pairing


Caviar is best paired with a white wine, sparkling or Champagne.


A white wine like Chablis can pair nicely with caviar bringing out the crisp minerality and clean fruit flavors of the wine.
